Olive Oils

 

Extracted from olives and used by Mediterranean civilizations for more than 5 000 years, the olive oil is still very mysterious. Present in the olive, it is a pure olive juice that has to be extracted with precautions, almost tenderly, at least with passion. Numerous olive varieties, many terroirs, know-how handed on and improved from generation to another offer to French olive oils a wide aromatic panel. It is sometimes hard to choose.
