Tips and tricks

Savour with a bottle of «Coteaux d’Aix» white wine.

Ingredients

  • 300 g salmon fillet
  • 3 table spoons subtle olive oil (Nyons PDO, Nice PDO, …)
  • 2 lemons
  • 150 g black olives (Nyons PDO, Nice PDO, Vallée des Baux de Provence PDO, Grossane, Tanche, Cailletier variety…)
  • 50 g capers
  • 50 g gherkins
  • 50 g shallots
  • Cut salmon fillet into very thin slices by using a carving knife.
  • Garnish a plate. Squeeze lemon on salmon.
  • Season with salt and pepper. Pour Nyons olive oil.
  • Let it rest in the fridge for 15min.
  • Dress with capers, gherkins, shallots and black olives.
