Tips and tricks
Savour with a bottle of «Coteaux d’Aix» white wine.
Ingredients
- 300 g salmon fillet
- 3 table spoons subtle olive oil (Nyons PDO, Nice PDO, …)
- 2 lemons
- 150 g black olives (Nyons PDO, Nice PDO, Vallée des Baux de Provence PDO, Grossane, Tanche, Cailletier variety…)
- 50 g capers
- 50 g gherkins
- 50 g shallots
- Cut salmon fillet into very thin slices by using a carving knife.
- Garnish a plate. Squeeze lemon on salmon.
- Season with salt and pepper. Pour Nyons olive oil.
- Let it rest in the fridge for 15min.
- Dress with capers, gherkins, shallots and black olives.
