{"id":9739,"date":"2014-10-27T11:02:30","date_gmt":"2014-10-27T10:02:30","guid":{"rendered":"https:\/\/huiles-et-olives.fr\/?page_id=9739"},"modified":"2017-04-06T10:26:50","modified_gmt":"2017-04-06T08:26:50","slug":"olive-oils-pdo","status":"publish","type":"page","link":"https:\/\/huiles-et-olives.fr\/en\/know-everything\/protected-designation-pdo\/olive-oils-pdo\/","title":{"rendered":"Huiles d&#8217;olive : les AOP"},"content":{"rendered":"<div class=\"tpl_2\">\n<p>For each of the olive areas in <strong>Protected Designation of Origin<\/strong>, were identified:<\/p>\n<ul>\n<li>The tan of the soil presenting the most optimal oil activity and where the cultivation of the olive tree was the most constant. <strong>So we can find olive trees which are several times centenarian in every identified PDO area.<\/strong><\/li>\n<li>One or several specific <em>varieties<\/em> of the area.<\/li>\n<li>The <em>cultivation<\/em>, production and traditional transformation practises (density of the hectare, size, harvest date\u2026). <strong>Their identification has a double aim: the inventory\/preservation of the know-how and the respect of landscapes and environment.<\/strong><\/li>\n<li>The <em>typical<\/em> character of olive oil. The implementation of the \u201cAppellation d\u2019Origine Contr\u00f4l\u00e9e\u201d(AOC) for an olive oil meets an administrative recognition of the specificity of this olive oil, specificity due to its origin.
