It is absolutely not an indication of origin.<\/blockquote>\n\n                        <div style=\"clear: both\"><\/div>\n                        <\/div><\/div>\n<div class=\"two_columns_50_50 clearfix\"><div class=\"column1\"><div class=\"column_inner\">\n<h6>The trade name<\/h6>\n<p>It&#8217;s the description of a product. For the oil coming from olives, there are : extra virgin olive oil, virgin olive oil, olive oil composed of refined olive oils and virgin olive oils, and olive-pomace oil. <strong>This classification is established by the European regulation<\/strong> which defines each trade name depending on precise physicochemical and organoleptic criteria (free acidity rate, peroxide index,\u2026).<br \/> <blockquote style=width:100%;> <strong>Extra virgin olive oil<\/strong>\u00a0: no defect in mouth or nose, free acidity rate \u2264 0,8 %&#8230;<br \/> <strong>Virgin olive oil <\/strong>\u00a0: light defect possible in mouth or nose, free acidity rate \u2264 2 %&#8230;<br \/> <\/blockquote> <\/div><\/div>\n<div class=\"column2\"><div class=\"column_inner\">\n<h6>The olive oil category<\/h6>\n<p>For each trade name, categories are clearly defined. The consumer can understand better the trade name and then the product :<\/p>\n<p><strong>For extra virgin olive oil :<\/strong>\u00a0&#8220;superior category olive oil obtained directly from olives and solely by mechanical means&#8221;<br \/> <strong>For virgin olive oil :<\/strong>\u00a0&#8220;live oil obtained directly from olives and solely by mechanical means&#8221;<br \/> <strong>For olive oil composed of refined olive oils and virgin olive oils :<\/strong>\u00a0&#8220;oil comprising exclusively olive oils that have undergone refining and oils obtained directly from olives&#8221;<br \/> <strong>For olive-pomace oil :<\/strong>\u00a0&#8220;oil comprising exclusively oils obtained by treating the product obtained after the extraction of olive oils and oils obtained directly from olives &#8211; or oil comprising exclusively oils obtained by processing olive pomace and oils obtained directly from olives&#8221;.<br \/> <\/div><\/div><\/div>\n<div class=\"tpl_2_cadre rameau_left\">\n                        <div class=\"rameau\"><\/div><div class=\"tpl_2_cadre_content\"> \n                         <div class=\"two_columns_66_33 clearfix\"><div class=\"column1\"><div class=\"column_inner\">\n<h6>What does \u00ab\u00a0virgin\u00a0\u00bb mean for vegetable oils\u00a0?<\/h6>\n<p>The mention of the word \u201cvirgin\u201d in the name of the vegetable oils indicates that oil has been extracted by means that do not change the qualities of the product. If the trade name doesn\u2019t have this mention, this means that the oil has been obtained by refining or by other processes removing the taste, the smell and the color.<\/p>\n<p>The word \u201cvirgin\u201d means that the olive oil is extracted by mechanical means preserving all the qualities of the product (the oil present in the fruit). So this is a pure fruit juice.<\/p>\n<p><strong>A refined olive oil is a lampante oil<\/strong>\u00a0(which does not fit for consumption) which is processed (chemically and physically) to remove its color, smell and taste. Contrary to other vegetable oils such as sunflower or rapeseed oil, the regulation forbids its sale as it is, it has to be mixed with virgin olive oil. This is then sold with the name \u201colive oil composed of refined olive oil and virgin olive oil\u201d.<br \/> <blockquote style=width:90%;> <strong>Good to know :<\/strong>\u00a0we only find this kind of olive oil in some ready-cooked dishes in France but it represents 50% of the Spanish consumption of olive oils.<br \/> <\/blockquote> <\/div><\/div> <div class=\"column2\"><div class=\"column_inner\"> <a href=\"https:\/\/huiles-et-olives.fr\/wp-content\/uploads\/huile-verre1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-2806 size-medium\" src=\"https:\/\/huiles-et-olives.fr\/wp-content\/uploads\/huile-verre1-300x300.jpg\" alt=\"\" width=\"300\" height=\"300\" \/><\/a><br \/> <\/div><\/div><\/div> \n                        <div style=\"clear: both\"><\/div>\n                        <\/div><\/div>\n<div class=\"two_columns_50_50 clearfix\"><div class=\"column1\"><div class=\"column_inner\">\n<h6>The conditions of preservation<\/h6>\n<p>It is the duration during which the oil keeps all its gustative and physicochemical qualities. The olive oil, as for each foodstuff with a date of minimum durability (DMD), is not an ultra-perishable foodstuff.<br \/> <blockquote style=width:100%;> The olive oil can be consumed without any danger for human health after the DMD but, could loose some of its gustative qualities.<br \/> <\/blockquote> <\/div><\/div> <div class=\"column2\"><div class=\"column_inner\">\n<h6>The identification of the person responsible for marketing<\/h6>\n<p>Name or company name + address of the producer, of the conditioner or of the importer. This mention does not indicate either a quality or a specific taste.<\/p>\n<p><strong>Mentions less important in the choice of an olive oil :<\/strong><\/p>\n<ul>\n<li>Pression \u00e0 froid \/ Extraite \u00e0 froid (cold pressing \/ cold extraction) : these mentions indicate the system used (pressure \/ centrifugation or percolation) and an extraction temperature inferior to 27 \u00b0C.
