The subtle olive oil

The olive oils having a subtle taste come from ripe and fresh olives. They are generally sweet with fruit aromas (dried and ripe), flowers aromas with vegetal notes. These oils match perfectly with fishes, raw and cooked vegetables, desserts…

The intense olive oil

The olive oil with an intense taste is made with fresh olives, harvested before ripeness. They can have a light to middle bitterness, the gustative notes are vegetable, herbaceous. They perfectly match with starches, fishes, meats…
For your shopping, select an oil from : Vallée des Baux-de-Provence PDO, Haute-Provence PDO, Aix-en-Provence PDO, Nîmes PDO, Provence AOC or oils from a single variety such as Aglandau, Bouteillan, Olivière, Picholine, Petit Ribier…

The traditional taste

The olive oils with a traditional taste (« matured olives ») differentiate from the others because they do not have neither a fresh fruit characteristic nor vegetable aroma. These oils comes from olives which are stored and matured from 4 to 8 days, in appropriate and controlled conditions, before extraction. They give cocoa, mushroom, vanilla, candied fruits notes, without bitterness and match with games, green salads, shellfish…
